Food of the Week: Avocado
I’m setting you a challenge of including this weeks “Food of the Week” into your diet somewhere, somehow over the next 7 days…
Avocado’s are an amazing source of healthy fats. Technically, avocado’s are a fruit, but unlike their sweeter brothers and sisters, they are super low in carbs and more than three quarters monounsaturated fat. These are the “good fats” that are vital for life… cell structure, heart health, lowering cholesterol, reducing cancer risk, eye health, osteoporosis prevention to name just a few…
Eating avocados is a great source of fibre (vital for weight management and digestive health) and increases the absorption of antioxidants (making avocados a great addition to a colourful salad).
Loaded with vitamins K, C, E, B vitamins, and a whole host more… avocados have more potassium than bananas! 🙂
Recipe wise…I always come back to my staple fave… spelt toast, poached eggs and avocado, but there are so many other great options…
I’ve added it into smoothies, with protein powder for a creamy rich taste
Chop it into salads for texture and taste
Cut in half, scoop out some flesh, pop an egg in and bake in the oven
Replace the fat in baking recipes with avocado… it’s an awesome sub in brownies 🙂
Make your own guacamole, free from chemicals and junk
Smash it onto toast… add a poached egg, some feta, goats cheese or chunks of tomato.
